Could you please tell me if those labs can be done with Dynamips?

I’m pretty sure they can be, especially since Narbik’s topology is very simple compared to the IE and IPExpert workbooks. There’s obviously some switch-related stuff in any workbook you can’t do in Dynamips vs. real 3550/3560 switches, especially the QoS stuff, but everything else should work.
Dynamips is definitely my plan for 90% of all my practice labs, especially the technology-focused ones. I’ve already had very good luck using Dynamips for some of the IE frame relay labs.
